Kitchari

This easy-to-digest dish is beneficial for all body types and all seasons. It works well when digestion is weak, like after traveling or when you are under stress and need to support your digestive system.

You can add your favorite vegetables to this recipe as well and adjust the taste.

Ingredients

  • 2 Tbsp Ghee
  • 1/2 cup Rice
  • 1/2 cup Yellow Mung Dal
  • 1 tsp Turmeric
  • 1/2 tsp Cumin
  • 1/2 tsp Coriander
  • 1/4 tsp Fennel
  • 1/2 tsp Ginger (fresh, grated)
  • 4-6 cups Water
  • 4 cups Spinach or Chard
  • 2 medium Carrots
  • 1 Lemon or Lime (small)
  • Salt & Pepper to taste

Directions

  1. Melt ghee in a saucepan over medium-high heat
  2. Add turmeric, cumin, and coriander, and stir to heat evenly.
  3. Continue to add the following ingredients in this order while stirring over heat:
  4. Add rice and yellow mung dal
  5. Add water
  6. Add spinach or Chard, Carrots, and Ginger
  7. Add salt and pepper, lemon or lime juice to taste
  8. Heat through and enjoy!
